Grilled Kingfish

Ingredients:

  •          500gm Kingfish fillets
  •          1 packet Mexican spice
  •          1 tblsp Sugar
  •          1 pinch Salt
  •          ½ each Diced Red Capsicum
  •          ½ each Diced Red Onion
  •          2 stalks Finely Sliced Shallot
  •          2 cloves Minced Garlic
  •          50ml Olive Oil

Marinate king fish with all ingredients listed. Let it sit for 30 – 60 mins (in fridge). Grill on medium heat (flip every 2 mins) until cooked through. Make sure all the marinade is used during the cooking process.
