Thai Pork Broth W/choy Sum

Method

    Heat a pan to med-high adding the coconut oil; sauté the shallots and ginger. Add the pork mince, garlic, tamari, half the chilli and fish sauce. Cover and reduce heat to medium, cook for around 8-12 mins until pork is cooked through

    In a separate pot add the chicken stock, remaining chilli and fish sauce. Season well. Bring to the boil.

    Once the broth is boiling add the pork, and kaffir lime leaf and cook for 2 minutes. Once complete. Turn the heat off add the choy sum and bean sprouts. The residual heat will cook these in roughly one minute.

    Pour into a bowl and top the broth with Thai basil, coriander and a wedge of lime. Enjoy!

  • 50g x Ginger grams - thinly sliced
  • 1 x Thai chilli - thinly sliced
  • 2 x Coriander - leaves picked
  • 1 x Kaffir lime leaf - leave ripped
  • 350g x Pork mince grams
  • 1 x Choy sum bunch
  • 4 x Shallots sprig - finely sliced
  • 125g x Bean sprouts grams
  • 2 x Thai Basil sprig
  • 1/2 x Lime - cut in wedges
