Green Fish Curry With Seasonal Greens

    Heat coconut oil in a pan on medium high. Use a pan large enough to cook all your fish.

    Once hot add the biriyani spice mix and stir for one minute creating a curry paste. Add the fish to the paste and cook for two minutes, spooning the paste over the fish.

    Add the squash, coconut cream, and cook for a further 5 minutes until the squash is tender and the fish cooked through. Careful not to overcook the fish.

    off the heat and add the bok choy to the pan, Stir the bok choy and let the residual heat wilt the leaves. Add the bean sprouts, coriander, lime juice and fish sauce. Stir to to combine. Serve and enjoy!
